Grapes: Trebbiano, Malvasia and Sangiovese.
Vineyards: Pozzo delle Fate, La Sala
Number of vines per hectar: 4800
Training System: spurred cordon and guyot.
Harvest: hand-picked
Drying system: grape bunches and then hung on chains for 4 months to dry.
Aging: 5 years in 50lt and 100lt barrels.
Production: circa 1000 bottles.
Tasting notes: Vin Santo is a traditional Tuscan dessert wine that reminds us of our history and belonging to this land. It has an amber colour, and tastes of fig, dry fruits and honey, balanced with sweetness, yet long and persistent with a warm finish.
This wine goes so well with the traditional Tuscan treat Cantucci (almond biscuits) and desserts. It can also be served as aperitif or as a quaffing wine. Highly recommended to try with blue cheese.
